Great advice, and great point. In addition to risers, look for leaking hoses, exhaust hoses, engine freeze plugs, oil cooler lines, etc. You said the shaft seal looked ok. Did you look at it while you were underway? Some leak like a sieve when the shaft is spinning. Also look for through hulls close to the waterline, that might be underwater while underway.

Is the engine raw water cooled or does it have closed cooling?

Took the day off yesterday and found a few problems I was able to address...

1. Plug wire number 8 was not hooked to the spark plug. Running a V8 on 7 cylinders is never a good idea. I decided to replace all the plugs, wires and distributor cap and rotor.

2. The water line running into the aftermarket water heater was disconnected. I just so happened to have filled the FW system up a few weeks ago. Hopefully this was the source of additional water int he bilge. Time shall tell!
