On the 12m sedan access is through a panel in the back of the starboard locker. Picture is of the space during the replacement of ours (picture is turned on it's side for some reason):

On our 12m Sedan, we are entirely Garmin, except for the autopilot (still interfaces) since Garmin did not make a pump or control big enough for the boat. We use Simrad for the pump, controller, and autopilot. Garmin can still feed/transfer information via the NMEA 2000 bus.

Our fiberglass guy removed all the coring and made the unit solid glass with some carbon fiber roving in it. Crazy solid now.

That still give you 30 amps total. The 1/2 switch is the equivalent of taking the panel from 110volt to 220volt. Our generator puts out 65 amps, so it can handle the load of the whole panel. Bring the boat up to a certain RPM (that is good planing speed), you can play with the tabs to find the best running angle. D...

To us, running angle depends on seas. Definitely bow high, but we trim for speed. That said, based on how much weight we usually have, I have never touched a trim tab in years.
